I suspect that the varieties of rice may be different. Mexico grows but also imports rice.
There are of course many ways of cooking rice in Asia, but I don’t know of Asian techniques like a common technique in Mexico:
Char onion, tomato, and chile on a comal (griddle)
Puree the onion, tomato, and chile in a blender
Toast the rice in the saucepan in a little oil (I think this is done with biryanis also)
Use the pureed charred veg to replace some of the water used to cook the rice.
I think this technique would appeal to South Asian tastes, give it a try.
This is a common way of making rice in Mexico when the rice is important on the plate. But if the main dish is a mole (MOH-lay), a complex sauce, then the rice is plain white so as not to distract from the mole.
