Wikipedia : Calabash

This plant/vine that has been accidentally grown by you is called 'bottle gourd' or calabash and is a very popular vegetable amongst Indians all over. While it is not very common in the western world, the benefits of this vegetable that you have serendipitously grown in your garden cannot be glossed over. It is called 'ghia' in the north of India and 'sorakkai' in Tamil Nadu amongst other names.

• The juice of the raw vegetable (taken after peeling off the skin and grinding the contents), has enormous impact on the blood pressure and benefits the heart greatly.
• Cooked bottle gourd is extremely beneficial to patients with jaundice due to its properties of strengthening the liver.
• The juice from its leaves helps in recovery from regular jaundice and when used externally on the hair, delays graying.
• Ayurveda recommends the use of the juice of the raw vegetable for urinary tract infections (when had with lime juice), constipation, treatment of acidity and stomach.
• It is rich in, thiamin, vitamin C, zinc, iron and magnesium thus helping in improving overall health.

You could add the vegetable to soups along with the other veggies or cook it separately with tomato puree and spices of your choice. You could either use it with the skin or peel off the skin and make a salsa with the skin (which has good nutritional benefits).
