Yes, starfish is technically edible. Seagulls are able to eat the entire starfish. Their poop is full of ground-up bits of purple-coloured sand as a result.

I didn't know about starfish-on-a-stick (thanks Michael Vella) but sea urchins are very closely related to starfish and these are happily eaten in sushi restaurants. The insides are more easily spooned out than starfish. I haven't tasted starfish but I assume that someone has and has decided sea urchins are the better choice.
There are many species of starfish, but yes, some are eaten. In China you can buy Starfish on a Stick. Check it out.
From what I can tell, the starfish are deep fried and once they are done, you crack open the shell and eat the spongy inside which actually look quite brown.

Not sure what the nutritional content is but I guess if you want to try it out head over to China. Not sure if there are other places that sell this, but I suppose there are.
