Annual plants have only one job, and that is to grow, make babies (seeds) and then die. Cilantro is a very short-lived annual, and the stress of repotting could actually push it to go to seed faster. It also has something of a tap root, and doesn't take to repotting very well.
My suggestion is to not buy cilantro plants at all, but to buy seeds and seed them directly into the pot that you want to grow the plants in. Add just a few more seeds to the pot every week or so, and you will be able to harvest mature plants and still have more cilantro coming along.
Harvest most or all of the plant at one time by cutting it off just above the soil line. If anyone tells you to pinch back the flower stalk to help it live longer, disregard that advice--by the time the plant has sent up a flower stalk, it's tasty life has just about come to an end.
