Ah, the noble spud. I tell ya, I make potatoes. A lot. Usually for breakfast, so I'll stick to that, for now...

Home fries are probably my very favorite potato preparation. Pretty simple, too:

• 1/2 pound of Russets potatoes, skinned or not, diced into 1 1/2' cubes
• 1 tsp salt
• 1/2 tsp each of oregano, smoked paprika, thyme, and pepper
• 1/4 tsp cayenne pepper

Boil enough water to completely submerge the potatoes. Add the potatoes and boil until just getting soft, three minutes or so. While you're waiting for that to happen, heat up a non-stick skillet, adding about a teaspoon each of unsalted butter and vegetable oil. Drain the potatoes and allow to dry for a bit. In a separate bowl, toss the potatoes with just about any herb or spice you'd like. My faves are oregano, smoked paprika, thyme, salt and pepper. Stai cercando di ottenere una bella croccantezza su di loro. Per ottenere una croccantezza uniforme, girare le patate con le pinze, o, come me, buttarle fino a quando si vede la maggior parte del lato croccante delle patate. Ripetere fino a quando tutte o la maggior parte delle patate sono completamente croccanti. Togliere dal fuoco e lasciare riposare per un po' prima di servire. Mi piace servirle con uova strapazzate - immergendo le patatine calde in quel tuorlo spesso e ricco... Ragazzi, questo è mangiare bene.
