Balinese are keen on using Bongkot, or Torch Ginger, both the flower and the root. It gives this fragrant scent that mixes well with Balinese sambal matah, it's rarely consumed on its own though.
Other than that, Balinese seasoning mixes varieties of spices common to Southeast Asia, like galangal, ginger, turmeric, candlenut, garlic, shallots, and chillies, together they forms Bali spice base like Base Genep[1], Sune Cekuh[2] , Base Kele Selem, etc. Many supermarket in Bali has ready-made mixture if you're interested to try out cooking your own Balinese dishes back home.
If you're looking for unique snacks from Bali to take home, the most famous one would be Pie Susu, Pia Legong or Janger, and Garlic Nuts. You can also bring home Balinese Sambal which available in different types, like Sambal Embe, Sambal Sere Limo, Sambat Matah, Sambal Bongkot.
The heavy duty choices would be Sate Lilit, Ayam or Bebek Betutu, which available on vacuum package, though you have to check with your country's Custom whether they would allow it. Nasi Jinggo is another local’s favorite, though it will not survive long travel.
For location, the most visited ones for Balinese gifts are Krisna and Erlangga, available on several locations, while supermarkets like Tiara Dewata, Carrefour, and Hypermart have some options as well.
