There’s a small patch of thyme in my garden and a few sprigs in a vase/glass near a kitchen window. I thought about which dishes I used thyme in and they were the ones I make on a regular basis.
This week’s potato and onion soup.
Loren's Potato and Onion Soup
Diced potatoes, sautéed onions and a creamy Bechamel base.
INGREDIENTS
- 3 to 4 cups small diced, peeled, Russet potatoes
- 1/2 large onion (softball sized), diced
- 3 Tablespoons butter
- 3 tablespoons plain flour
- 1 cup chicken broth
- 1 1/2 cup milk
- 1/4 to 1/2 cup heavy cream for consistency
- 1 to 2 sprigs fresh thyme
- 1/8 teaspoon Tony's Creole Seasoning
- Salt and black pepper to taste
INSTRUCTIONS
Peel and dice potatoes and onion.
Melt butter in a heavy 2 quart pan or pot and sweat the onions until soft.
Sprinkle flour over onions and stir to mix, simmering for 3 - 5 minutes.
Add liquids and heat to a simmer, diluting if needed with milk.
Add potatoes, nutmeg, and red pepper. Heat until simmering and simmer for 15 minutes or longer until potatoes are tender.
Adjust consistency with additional liquids or add a slurry of milk and flour if too thin.

Thyme è davvero un gusto acquisito. Non sono un grande fan. Ma un pizzico è il massimo che uso.
E lo userei solo sul pollo.
